Garlic Mashed Cauliflower “No-Potatoes”

Who doesn’t enjoy a hearty bowl of mashed potatoes?  The carbs on the other hand compounded by the fact that mashed potatoes are not the easiest on the waistline can make thanksgiving a difficult time for the health conscious.  If you have never tried mashed cauliflower then you are certainly missing out on a truly delicious (mouth watering delicious!) treat and a perfect side dish any time of year really.  Super simple and prepare these for the unsuspecting and watch them disappear…don’t worry though, if you need to make more just remember they are super super easy to make!

Here’s what you’ll need:

 

Here’s how you will do it:

  1. Steam the cauliflower until tender (I use steamer microwave bags and it doesn’t get any easier than that)
  2. Blend the cauliflower (while still hot), butter, sea salt, garlic cloves, and pepper in a large food process or blender until creamy and smooth
  3. Serve and enjoy!!! 🙂

 

This recipe stores great in the fridge for frequent trips to nibble some more later that evening
